    Best Edamame Dip and Spread

    Behold the greenness! Introducing an edamame dip with a flavor palate that makes sense. No avocado here. Instead, this is a dip that will widen your mezze pallet with fresh, gingery flavor.

    The anatomy of a dip

    When it comes to bean dips, my formula hasn’t failed me yet:

    • Beans
    • fat
    • vinegar
    • salt
    • spices, herbs, and garlic

    With a little creativity, you can make many a dip that holds its own by tweaking the ingredient ratios along the way. This edamame dip was created through this type of experimentation, including a lot of tasting along the way. I may or may not have “tasted” a third of the dip…

    Edamame dip ingredients

    • Beans – edamame
    • fat – neutral oil, tahini
    • vinegar – rice vinegar
    • salt – soy sauce and light soy sauce
    • spices, herbs, and garlic – garlic, fresh ginger, a touch wasabi

    I served it with tortilla chips, crudité. Then, the next day, as a spread on a salad wrap with spinach, oven roasted tofu, and hot sauce–yum! The edamame dip–and the resultant wrap–was indeed one for the books.

    I wish I’d taken more pictures of this edamame dip! I made it for family friends who came over for a social distance happy hour, and my mom served it, by the dollop, in old-fashioned ice cream parlor glasses. Unfortunately, I didn’t get a picture–the humidity was really something else.

    Description

    A bright dip to add to an appetizer tray or spread onto a wrap.  


    Ingredients

    Scale
    • 1 ½ cups edamame, cooked
    • 2 tablespoons light oil
    • 1 tablespoon tahini
    • 1 teaspoon sesame oil
    • ½ teaspoon soy sauce
    • 1 teaspoon light soy sauce (the one that contains less sodium)
    • 2 cloves garlic
    • a touch wasabi
    • ¼ inch ginger
    • 1 tablespoon rice vinegar

    Instructions

    1. Put all ingredients in a blender and blend until very smooth. 

    2. Garnish with sesame seeds and a dash of sesame oil.
