Crispy, Cheesy, Roasted Broccoli Rabe

Description

A savory, crispy, cheesy recipe for greens. This is the perfect Italian side dish for any hearty meal.


Ingredients

  • 1 bunch broccoli rabe
  • 3 large cloves garlic, minced (or 1 tablespoon minced garlic)
  • 2 tablespoons grated Cotija cheese
  • 1/2 teaspoon kosher salt
  • black pepper, to taste
  • 2 1/2 tablespoons olive oil (plus more for greasing)

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit and wipe a cookie sheet with some extra olive oil, or cover it with olive oil spray.
  2. Wash the broccoli rabe. Cut off the bottom 1/4 inch of the stems, and cut the rest into 1-inch chunks.
  3. Put the broccoli rabe into a bowl with the rest of the ingredients. Massage generously, until the olive oil and cheese fill all the crevices.
  4. Place the broccoli rabe on the baking sheet in a single layer, and bake for 15-20 minutes, shaking and mixing it around about three quarters of the way through. You’ll know it’s done when the ends are crispy.
  5. Serve hot.

This recipe serves two. Double it for a family, or quadruple it for a crowd or a holiday.

Any hard grated cheese can work in this recipe.

Adjust the olive oil according to the amount of broccolini you have. If your bunch of broccolini is big, add more olive oil. If it’s smaller, you can reduce it slightly.
